My Simple Lunch Recipe (Only 6 Ingredients!)-Cooking with Kate

Happy frugal Friday friends. It’s October and sometimes That means candy corn Speaking of food a Little bit healthier than candy corn. I’m gonna share with you today a six ingredient recipe. I Laugh when I say recipe cuz I don’t really do recipes but it’s only six ingredients and it’s what I make for lunch Every single day right now I go in phases sometimes are you guys like that? Let me know if I’m the only one like back when I would spend a little bit a little less wisely I could eat subway all week for a week and then get sick of it and move on to the next thing for this recipe You need chicken teriyaki sauce barbecue sauce onions mushrooms and a little oil That’s it. So good. Now remember you’re looking at Kate right now. Kate doesn’t cook Very well. She doesn’t cook Super often and she has no expertise in this whatsoever. So I’m talking to the average person That doesn’t cook a lot but wants to make something delicious for themselves for lunch If that’s you keep watching if you’ve been watching me for a little bit, you know I am a single mom with lots of jobs and I don’t have time to Mess around with meal prep too much so this is what I do almost every single Sunday sometimes Saturday, but usually Sunday it takes 20 minutes and I do other things while it’s cooking so it’s so easy Come join me. Let’s cook Never thought I’d say that on camera Ready? Let’s go and here are the stars of this recipe Chicken and yes, I’m gonna make it all cuz it’s gonna last all week baby, Bella fresh mushrooms and Onion, I’m gonna cut up whole thing Teriyaki sauce barbecue sauce and olive oil. I just want to point out that craft barbecue sauce At my grocery store is two dollars and thirty nine cents at Dollar Tree. Guess what? It’s a dollar I’m gonna put the oven at 350 So being an inexperienced cook You guys know, I don’t know how to properly marinate Anything what I’m gonna do is I’m gonna take this chicken Now I’m weird about meat Sometimes if I see something gross on meat or I perceive as gross I struggle with eating it this brand nature’s promised nature’s promise is Really good to me. I feel like When I’m eating it, I’m not groups. Don’t know it’s a weird thing to say guys, but I’m just being honest I’m ripping this open all I do to marinate Is I take this craft which I already use some of it take a bowl pour it in It looks so much fancier on cooking channels when you’re actually probably cooking but so put it in a bowl And all I do now, I just washed my hands so you didn’t see that part But take the chicken Put it in one piece two pieces at a time. Whatever Just roll it around here Take it out Put it on the pan I’ll show you what it looks like when I’m all done, but I just keep taking chicken Rolling it around in the sauce. I know you guys you probably like marinate it like overnight to make it good guys I’m not that fancy It’s not that fancy. This is what I’m doing. This is how I do it you Can laugh at me all you want this is what get it gets it done and I swear tastes really good for my inexperienced palette a palette that enjoys peanut butter and jelly and Sorry that was stuck to my finger here we go what two more pieces left Make sure get it all in there doo-doo-doo doesn’t this look just disgusting but it’s so good. I Bet you guys are watching I’m like what’s wrong with her this is really what she does but this is really Okay Huh, this is what my chicken looks like before it’s going in the oven next I take out this pan Believe it’s the Rachel ray collection and I’m going to saute Some mushrooms and onions, but first I must cut the onion No, I don’t have any onion cutting skills You guys know this? All right Like Really? No skills, but sometimes I wonder I used to think that it was kind of like a a Lie that when you cut up onions you cry because I thought what’s wrong with these people why why would an onion make you cry? It’s totally oh It’s real the real tears are real That was awful I’ve cut up the onions now I’m trying to film this so I would probably do it more toward the stove, but you don’t have a really good view So I put a little oil in Just to kind of like coat the whole bottom there Maybe just a teensy more Not too much. Oh You guys onions seriously Take these Put them all in and you’re like Kate you could probably do this with a little more finesse But just remember who you’re talking to, this is Kate. This is cooking with Kate and Everything’s a little bit Raw an Unskilled and that’s just how we do it. All right and Then I take some of this and I pour it in also into the pan my chicken is ready for the oven take this put it in ovens at 350 and I’m gonna do You can do 20 but I just make sure it is very cooked not overcook 22 minutes. That’s what I do Oh Turn the light on So you can see him in action Okay. So when I first put this on I’m like wow that looks uh, not appetizing in any way But what will happen is as soon as it starts cooking I kind of put it a little higher that’s partly too high. You can hear it And I start cooking it and I add in any oil or any teriyaki that I need that I feel if it needs to be a little bit more Coated and then I just keep cooking it and I like them a little crispy to be honest you guys What about you showing you but as time goes on I just stir it around a little And you’ll see it get a little bit more exciting And now we wait Can you hear it sizzling it’s gonna be yummy cook sizzle sizzle. Oh I wish you guys could smell this lose the camera True story, I Think the more my confidence grows in cooking the more I’ll enjoy it My parents are both great at cooking and I feel like my mom Said she was not interested in cooking but when she had kids all of a sudden she had to cook my dad is actually a very good cook just uh, I don’t say naturally, but kind of he he just He cooks up a storm and sometimes when I’m talking about how little I cook. He’s just like How does this happen like they used to cook every single night Meat like the standard American diet and I just never took an interest for some reason I’m not quite sure why But now that I have a son and also it just saves a lot of money to cook for yourself guys I have a crock-pot also my famous meatballs that Christmas that I do the crock pots three ingredients meatballs barbecue sauce and grape jelly It’s just I don’t know. I think I’ll just keep adding stuff slowly to my repertoire So you guys that are watching this. Do you guys cook a lot? Are you good at it? Do you do it out of necessity? I know it saves a lot of money, so I’m working on it, but it’s just something that never It’s kind of weird that it wouldn’t be a priority when we need food, too eat It’s not interesting I Try not to judge others for what they decide like some people are Terrible at cleaning house and don’t clean house some people don’t cook I try not to beat you judging about what people are great at and what they prioritize because we all have our things that we prioritize for whatever reason and We’re the ones that have to deal with the consequences of that. No one else, you know what I’m saying? So I choose not to cook. Are we still gonna eat? Yeah, and if someone’s house is a complete disaster does it affect me? Matt Nine minutes left on the chicken I’m choosing to talk to you today But I know that we all feel like we don’t have enough hours in the day This is a time where you could be doing something else like if I weren’t talking to you I might be on my computer actually responding to comments to you I could be Working on a script for a future video. I could be throwing in a load of laundry I could be picking up the piles of stuffed animals that are in my middle room right now from Caden playing I could Wash a couple dishes as I get older. I realized the importance sometimes of single tasking. I feel like we’re always trying to multitask and then Not enjoying the things we’re doing so like right now instead of talking to you I could be responding to comments to you on YouTube, which I Would do right now, but I really try to give you like my undivided attention So right now with the stove on I probably wouldn’t do that but I could Tidy up your house a little bit all the little things that you don’t think you have time for during the day This kind of stuff. I feel like you can multitask if you’re if Caden is telling me about his day and You know great things or bad things. Like that’s not a time to multitask. That’s a time to give your undivided attention but if I’m just cooking right now. Like right now he’s he’s facetiming with his dad. So he is occupied So I will try to do a couple things here and there like my table right now you can’t see it Hope you can’t see it looks like a mound. Oh God, it’s awful. It’s just full of stuff. I should be picking that up. But right now I prefer to talk to you Yummy yummy yummy So then what I do when the veggies are ready And the chickens ready? I just put some in here put some like a bed of Mushrooms and onions in the bottom and then I put the chicken on top Voila Lunch and then I put it and usually like two to four containers and If I that usually makes about four days worth for me the fifth day I’ll eat like a tuna fish sandwich or something like that You know something a little different but at least it’s three to four solid meals for me at lunch and then what I do is I eat a half a cup of cottage cheese or Like a Dan and light yogurt I like those two I think it’s the toasted coconut that I like and then I’ll have a cup or a half a cup of raspberries or strawberries and a Ton of water Case Squad representing If you enjoyed cooking with Kate as a little change of scenery Please hit the thumbs up if you like frugal content I’m gonna be honest.     Not a fan of cooking or the clean up…I tend to batch cook enough for a few days and the freezer…taco meat, chicken breasts can used for a ton of dishes…an apple with peanut butter makes a great lunch…can you tell I live alone!

    I’ve been struggling with food for a while now. I use to love to cook but the job I have now keeps me out of the house for 12 hours a day. ( so grateful though). I use to make chicken stock and pesto and freeze it. It helps with quick meals but haven’t since this job. I also use to take 8-9 bulbs of garlic, mince in the food processor, then use a spatula to put a thin layer on plastic wrap. (4-5 “ long by 3” wide ) I make sure it’s wrapped well then in a freezer bag it goes. When I’m cooking and need fresh garlic , I take it out of the freezer and break a piece off. All that garlic makes 4-5 sheets of garlic and last a long time. Huge time saver!
    I have to get back to doing these 3 things at least. Then when I’m cooking I will double the recipes and freeze. I’m going to get a food saver for this to help prevent freezer burn. I can take a pouch out of the freezer, drop in boiling water to reheat. Fingers crossed I get back to doing these types of things. 😊

    Fun video! I do something similar. I bake chicken and cubed seeet potatoes at the same time. I use boneless skinless chicken brushed with bbq sauce! I can cook but this makes for easy delicious lunches. ☮️

    Thanks for this great video. I used to cook but I've not in MANY years. I'm glad to hear that I'm not the only one that raw meat just isn't appealing. It really grosses me out. I'll have to try that brand and this recipe. Thanks Kate!

    I am the youngest of 4 older brothers. My mother is Pennsylvania Dutch. We cooked everyday. Made bread everyday. Always fresh food from the farm. Now that I am older 65, I can really appreciate everything my mother and grandmother taught me. I still love to cook. And, always make extra to feed my neighbors if possible. Love your videos Kate. You rock.

    Prugne here, thumbs up #68, I like this recipe just for hanging out around the house, thanks for sharing!
    Lunch is always a hassle away from home, especially if you have a long commute or work 4-10's, or have a job in BFE… Plus I had only a half an hour for lunch working in BFE with only one restaurant nearby, try to slam a lunch into half an hour at a sit down restaurant… Be Sure to Call ahead. 😁
    P.S. My sister is fine, test was negative.

    Hello Kate, this video is hilarious, I actually lol at your onion cutting experience.
    I cook almost every day… it's my job (chef), but when I get home, sometimes I really don't want to cook, so I batch cook , so that I can always have something in the freezer that I can use. About once a month I make a variety of meals and pop them in the freezer..makes life so much easier and then I don't feel guilty about not having something nutritious for my little guy.

    I consider myself a good cook, however after so many years of cooking I am tired and it has become a chore. Since my husband can’t cook or want to learn (spoiled by his mother and me). He has become my Sous-chef if he wants me to cook. But even with my husband’s help I am getting tired of cooking. There are days I will not cook! My priorities in life is a nice well clean organized home. Kate your home looks. Very neat and clean 🧐

    I'm not a good cook!!!! Don't like to cook!! But we need to eat..right??? So I cook easy.. uncomplicated food. Sometimes it's a frozen dinner..a sandwich..soup.

    Marinade is super easy.put that meat into a plastic tub with lid. Add the marinade and veggies. Pop lid on securely. Shake to coat.refridgerate for 2 hours minimum. Simple.
    Oh,aldi.balsamic vinegrette salad dressing makes a delicious marinade.they have the regular and lite. Both are good.

    I consider myself a pretty good cook. I cook almost every night too. I also change it up and try new things often. I also try hard to create a menu before I go grocery shopping to keep costs down. We also buy our beef and pork straight from a farmer. That reduces our cost immensely and we support a local farmer.

    I cooked professionally for many years and my food was midiocre to say the least. I didnt care for my job. Years later, cooking clicked for me. Now I cook from the heart and it comes out good. But took me many years to "get it". It will happened for you too. One day you will be hungry and your cooking skills will come together all of the sudden.

I've been told I'm a good cook by people other than my Mom but I Definitely don't find it fun!!! Wish I did as it's a huge part of life🍜

    I like to cook, because I like to save money and I like to eat. Mostly I cook things that I can just throw under the grill – potato waffles, cauliflower cheese grills, vegan burgers, baby corn. Little effort, little time, little washing up. It gets the job done.

    Things to do while cooking – read and reply to emails, do dishes, clean the kitchen generally, make necessary but brief phone calls (for instance to make a dental appointment), squats, refill my medication box, meal plan for the future. Xx

    We cook the same Kate !!!!!! Oh yeah !!!! My Husband is a Chef and if he didn't cook I would have a bowl of cereal !!! I think I'm going to surprise him and make this !! Ok I once had the fire dept come because my neighbor called about heavy smoke coming from my house. Yikes !!! I had pork chops in the oven for way too long. Damn timer !!! Another GREAT video !!!     I love to cook, but it has been difficult cooking frugally finding ingredients at good prices. Because of that I'm starting tomorow with a mushroom kit growing my own mushrooms is cheaper than buying them. But cooking every meal is time consuming and when you work all day sandwiches seem a great meal rather than cooking.

    Good effort ! If this works for you then it’s fine. As a cook, I try to appreciate the not everybody loves it like I do. Like you said you will always❤️ feed yourself and your son so it’s all good. And yes, I would watch another cooking with Kate episode!

    This is such a fun video Kate!!! You sound so much like me until earlier this year when my niece bought me an instant pot that changed my life….. Literally changed my life!! I started cooking simple things and watching u tube videos to come up with simple meal ideas. My small successes led to bigger successes. My 26 year old son recently asked me why I didn't cook this stuff when he was home. LOL … I failed as a mom, but at least now he and his kids really enjoy my food. Challenge yourself to find one new idea a month and have fun. BTW, my grands love helping me in the kitchen. Thanks for the video!

    Oh one more thing…. You can try marinading (sp?) your chicken strips in fajita or taco seasoning instead of BBQ sauce. Saute green peppers and onions to go with the chicken and you can serve with tortilla shells or serve over rice. Yummy!!!

    Try using a sweet onion… they taste great and don't create those painful tears 🙂 Don't apologize…. at least you are cooking ! I love cooking videos. Absolutely do more 🙂 I love cooking and baking and always have. I have been cooking and baking for 50 yrs.

    Great job cooking Kate!! I've always loved to cook. That's the way we do it, bake the chicken with some kind of seasoning and saute some veggies. Delish!!

    I love cooking, hate cleaning up the mess. I make supper every night – for two of us. I do most meals from scratch. On our schedule, and since it is so much cheaper – We have breakfast food for supper once a week. On weekends I cook all three meals. during the week my grandson has lunch at school. He makes his own breakfast cereal, toast, poptarts, etc. I eat leftovers for lunch through the week. I learned by watching my gram and my mom! I make some of my own creations, when I get in the cupboard and find I have weird ingredients I just start mixing things to see if I can get something edible!

    I’m a lazy cook! If I can’t make it in the crock pot, I probably won’t make it, but love simple recipes like this though!

    I cook by throwing delicious ingredients together too, and what I like to do is to stir fry shedded cabbage, sliced onions and mushrooms in one frypan and chicken chunks in a second pan, throw the whole mess over white rice marinated with a heaping helping of soy sauce and teriyaki sauce. It is so delicious I don’t even feel the need for Chinese carry-out anymore. Now it’s time to learn how to throw together sweet and sour soup. Saving a ton of money here.

    As a single mom I cook pretty much daily. I get bored with it. Wish i didn't have to even pick what I'm making most days. The delivery dinner meals are honestly a game changer for me. Started doing those when i broke my collarbone & shoulder and i still have different ones comes every other week. Saves me so much money than going weekly to grocery store and its truly taught me so many things. Yesterday my 11 yo son asked to cook with me, he helped a lot and having the exact ingredients and directions from the service made it easy. Also a cool date night activity.

    Good Job 👍 I love cooking. It saves money, is healthier and it tastes better. It is easy and gets easier with the practice. Have a look in the libreary for cook-books. AND! I HATE ironing 😉

    Not really! I cook sometimes. I feel like it's a waste of time!. I am like my mom. When she cuts peppers and onions they are like huge pieces, because she does not feel like cooking. She is not a bad cook, but my dad cooks with more flavor (don't tell I will try this with my family. Enjoy your weekend!

    I am not a cook. I hate to cook. I cook out of necessity. But there are a few things that people request when I do cook. Meatloaf, green bean casserole, grilled cheese sandwich. I used to make cupcakes a lot when my daughter was little. I cannot cook brown beans to save my life. I have tried and I fail EVERY time and it is a southern staple.
    Raspberries is not part of my food group EVER. We all have that one thing we will NEVER eat.

    When I cooked for a hubby and 3 kids, my neighbor would call me a lot of days and ask what I was making for supper. Years later, she said she called when she didnt know what to cook and then make the same thing I was. LOL.

    Okay, true confessions. I hate to cook. Always have, always will. Been married for almost 37 years with two grown and awesome kids. I can think of a bazillion things Id rather be doing. .But I like to lose weight and I hate to spend money. So I cook and freeze a ton of stuff. Do I delight in it? NOT FOR A MINUTE. HATE IT. But I do it like I brush my teeth and make my bed. It's good for me. You go, Kate. You've got this. 🙂

    I like to eat so I'm forced to cook. I was vegan for many years and I got so bored eating that way. Keep it simple. AND USE YOUR CROCK POT!! Its so easy….its a dump and go pot.

    Now this is my kind of cookin lol…Mostly been a single parent and this is how I've cooked and raised my kids. I always say, I've kept them alive this long cant be too bad of a cook! hahaha but seriously I do not have an interest in cooking, I appreciate talent in cooking but not for me. I have other priorities but I still do cook for my last daughter (25yo, 21yo, 16yo) anything that has 5 or less ingredients, I'm in! Take care-Vikki

    Question how much do you think a wash and blow for hair should cost? I just spent $65.00 plus a 10.00 tip for short hair. I retired from New York to Maryland and hair dressers and manicurist were much less in New York. I am retired now and live on a fixed income now. Never could work a blow dryer on my hair, but I find the cost too extravagant. Your thoughts on this issue?

    Great video! I go through phases with food too and I’ll eat the same lunch all week. This week I made ground turkey with taco seasoning and added cheese, salsa and jalapeños, then I’ll put it over lettuce to make a taco salad. So easy and delicious. One pound of ground turkey lasted me all week.

    Cut onions under running water – no tears😀 I cook only out of necessity. I'd rather clean than cook any day.

    Hi! Kate. I truly enjoy cooking and love creating new foods and recipes in the kitchen, when time allows. I had to learn out of necessity though. I was a young mother with a husband and child living on a small salary. I used basic cookbooks like Fannie Farmer, Betty Crocker, etc. to help me learn my skills. I think once you taste the difference in home cooking vs. takeout food or package and canned food it will give you the incentive to try more. I truly enjoyed your cooking video. Keep adding to your skills and try some more recipes. 👍

    Nothing like a simple quick and delicious meal. I cook pretty much every single day and I love it. Cooking does not have to be complicated or boring. The secret to that is making it simple and avoid complicated recipes.

    I feel the same way about meat sometimes, lol. I knew exactly what you were saying. Also. I miss Stop & Shop brand meats. I am originally from the Northeast. We moved South for my husband's job. Kroger has nothing on S&S. As always, your videos are fun to watch.

    That was great, made me laugh! I love Sunday mornings when everyone is in bed. That's my time to bake for the week (in my PJ's with a coffee). Cake and treats for kids lunchboxes. I've also been collecting spare garden produce from friends and family. Apples, pears, rhubarb, blackberries and raspberries to make sauces, jam and pie fillings. Roasting tomatoes etc for the freezer. Very enjoyable and relaxing .
    I also make more than we need if having a cottage pie or casserole. Portion the rest and freeze so I get a couple of nights off. No one wants to cook all the time!

    Ps I love cooking. I try to do everything myself, cheaper and healthy. I have food allergie for different spices so most of the meals I can' t buy anyway.
    I always look for weekly discount before I go to the shop. Check what I have in the pantry and fridge ( I have a list on the fridge so I know without having to dive in the freezer what is in it….by catagories like meats, soups, vegtable and already made)
    Write the items down that is want to use and than I make a detailed menu for a week with whatever is on sale and what we have, and what we are craving for, and eventually the shoppinglist.
    Oké maybe a bit crazy but it works for us. 🙂

    HI Kate, I’m from Delaware! My BF and I talk all the time about moving to Maine, but I am resisting so much because I hate the cold!! LOL, I love your channel and your very inspiring! I am mostly a vegan….vegetarian when other options are not available. I grew up on meat and potatoes in my house. I have average cooking skills but it took a long to achieve just that. I’m good at following a receipe most of the time. I would love to see more cooking videos , meals on a budget, lately my grocery budget has been around $25 a week, so I eat pretty simple. I am starting to learn to veganize standard meat meals sometimes now. Also your son is sooooo adorable, I miss those days , my kids are in their 20’s and so grown up.

    I love to cook. That doesn't mean I'm a good cook, tho. I think I enjoy the prep. It's meditative to me. I do clean like a maniac. I enjoy that because it's instant gratification! My late husband could cook circles around me. He was the type of cook who could take a solitary can of green beans and come up with something scrumptious. It came in handy when we were young and funds were so so limited. I really enjoyed this video and applaud your efforts.

    Thanks for your reply and your right about spending and allocating on things and experiences you love. I came up with a solution I am only going to use her every 12 weeks for haircut, style, wash . I will wash and set my own hair the old school way with hair rollers. If these blow hair styles had me coming out looking like Jennifer Lopez, I would just eat peanut butter and jelly sandwich (but not).

I feel like we all we learn something and laugh along the way. 😁 You can even do it as a LIVE…cook while chatting. 😉

    P.S. I personally enjoy cooking and baking but I hate cleaning up after, which is why I don't bake often. 😎

    I’m a pretty advanced, formally trained chef, but I’m still interested in seeing your recipe🧡I enjoy watching other styles and easy to make recipes!

    Edit: have you tried sheet pan meals? They’re very simple and inexpensive. Also, not a ton of dishes to clean up afterwards🙂

    I’ve found that keeping my onions in a reusable mesh bag in the fridge make it so that I never cry while cutting into them. Technically you’re not supposed to keep onions or potatoes in the fridge, but it’s always worked for me and they never dry out or cause smell issues 🤷🏻‍♀️

    Try marinating with Hosin sauce. If you like Chinese food, makes meat taste good. I like mushroom and onions. Like cooking, but I don't do much of it anymore.

    I'd call this BBQ glazed chicken breasts-themoniker isn't important, looks tasty, it's nutritious, you like it, that's all that matters. I was taught to cook at a very young age and do enjoy cooking, and it's creativity. Scratch cooking saves some serious bucks.

    Girlfriend, you crack me up!! I'm told that I'm a really good cook, but I hate doing it now. It's just such a pain in the rear, in my opinion. I try to make 2 or 3 things that will last for the week. I don't mind leftovers, but my husband HATES them. At my age, I say, then go make yourself a fresh meal!!!
